
When cooking with toddlers make something that is simple, has few ingredients and a short prep/cooking time!
You want the experience to be fun, so you need to be prepared to cook without the expectation they will eat it, just as a means of exploring food. Although these apricot balls by Louise Keates are very hard to resist.
Ingredients:
50g almond meal
200g sulphur free dried apricots
1 tbs orange juice
2 tbs water
70g desiccated coconut + extra for rolling.
3 tbs wheat germ
1-2 tbs maple syrup
Method:
Place ingredients into food processor until the mixture comes together.
Take heaped teaspoons of mixture, roll into balls and coat with coconut.
