
I think we need to alter our mentality around what breakfast consist of! It can be anything nutritious!
Don’t get me wrong my kids too have had cereal and toast on many an occasion, but once you get in a habit of creating other nutritious options you realise it doesn’t have to be hard.
Despite the name these gluten free morsels provide a good source of minerals and antioxidants! Top with cream cheese and smoked salmon, avocado and tomato, ricotta and honey, the options are endless.

Ingredients:
90g buckwheat flour
1tsp baking powder
1 egg
150ml your choice of milk
Coconut oil for frying
Method:
1. Whisk ingredients together.
2. Heat coconut oil in pan.
3. Drop dessertspoonfuls of batter in pan. Flip when wholes appear on surface.
5. Repeat & add toppings of choice.
